Habanero Crackers with Peach Jam

Spicy shortbread feta crackers pairs perfectly with sweet peach jam. A great appetizer to serve at your next get-together. 


How to make


Melt 2 tablespoons butter in 2-quart saucepan over medium heat; add onions. Cook 3-5 minutes or until slightly softened. Add apricots, brown sugar, honey,and salt. Continue cooking, stirring occasionally, 15-20 minutes or until almost all liquid is evaporated and jam is slightly thickened. Store any leftover jam in airtight container in refrigerator. Stir before using.


Heat oven to 350°F. Line baking sheets with parchment paper; set aside.


Combine flour, 6 tablespoons butter, 1/2 cup Philia spread, 1 tablespoon sugar, thyme and baking powder in food processor bowl fitted with metal blade. Process until mixture forms a dough. Wrap dough in plastic food wrap; refrigerate 30 minutes. 


Roll out dough, on lightly floured surface, into 16x8-inch rectangle about 1/8- to 1/4-inch thick. Cut into 1 1/4-inch squares. Bake 14-16 minutes or until crackers are golden brown around edges. Cool completely.


To assemble cracker bites, spread remaining Philia on crackers; top with a small scoop of jam and a sprinkle of thyme leaves.


Peach Onion Jam

2 tablespoons butter

1 large (1 1/2 cups) yellow onion, chopped

1/2 cup chopped, canned or fresh peaches

1/4 cup firmly packed brown sugar

1/4 cup honey

1/4 teaspoon salt

1 cup all-purpose flour

6 tablespoons butter, cut into large pieces

1 (7-ounce) container Philia™ Habanero Pepper Spread divided

1 tablespoon sugar

2 teaspoons finely chopped fresh thyme

1/2 teaspoon baking powder
