A Mediterranean inspired burger with Philia™ Roasted Red Pepper Spread and quick-pickle red onions. Use any proportion of lamb and beef you like.
Place onion slices into bowl; set aside. Combine vinegar, water, sugar, and 2 teaspoons salt together in small sauce pan. Heat until sugar and salt are completely dissolved. Pour over onion slices in bowl, making sure slices are submerged in the liquid. Let sit on counter while preparing burgers.
Heat gas grill on medium or charcoal grill until coals are ash white.
Combine lamb, beef, garlic, mint, cumin, salt, and pepper together in large bowl. Shape into 4 patties. (Patties should be slightly wider than your buns, as the burgers will shrink slightly when cooking.)
Using vegetable peeler or mandoline, make lengthwise cucumber ribbons, discarding first and last ribbons with outside peel if desired.
Grill burgers, 4 minutes on each side, or until internal temperature reaches at least 160°F and meat is no longer pink in center.
Meanwhile, place buns, cut-side down onto grill. Toast 2 minutes or until golden brown.
Spread 3 tablespoons feta spread on bottom of each bun. Place burger on top of spread. Top with pickled onions, cucumbers, and tomatoes.
